These Texas Cowboy (Cow Chip) cookies are crispy on the
edges but chewy and moist in the middle, and have a hundred mix-ins (Pecans!
Chocolate! Corn Flakes! Coconut!) that combine to make the Texas of all
cookies.
Ingredients:
- 1 cup (2 sticks) butter, softened
- 1 cup white sugar
- 1 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla
- 2 cups flour, spooned and leveled
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 cup old fashioned oats
- 1 cup corn flakes
- 1 cup pecans, roughly chopped (and toasted!)
- 1/2 cup coconut flakes
- 1 cup (6 ounces) peanut butter chips (I used Reese's)
- 1 cup (6 ounces) semi-sweet chocolate chips
